Ingredients

  • 3.5 lbs steaks (ribeye or NY strip, 1.5 inches thick)
  • 5 tablespoons tbsp olive oil
  • 2 tablespoons tbsp Worcestershire sauce
  • 1 teaspoons tsp fish sauce
  • 1 tablespoons tbsp steak seasoning (or Montreal steak seasoning)
  • 0.8 teaspoons tsp garlic powder
  • 0.8 teaspoons tsp onion powder
  • 1 teaspoons tsp salt
  • 0.5 teaspoons tsp black pepper
  • 2 handfuls hardwood charcoal (hickory or oak)

Method

  1. Prepare the marinade: In a bowl, whisk together 5 tablespoons tbsp olive oil, 2 tablespoons tbsp Worcestershire sauce, 1 teaspoons tsp fish sauce, 1 tablespoons tbsp steak seasoning (or Montreal steak seasoning), 0.8 teaspoons tsp garlic powder, 0.8 teaspoons tsp onion powder, 1 teaspoons tsp salt, and 0.5 teaspoons tsp black pepper. Place 3.5 lbs steaks (ribeye or NY strip, 1.5 inches thick) in a large baking dish or resealable bag and pour the marinade over, coating all sides evenly. Cover and marinate in the fridge for at least 8 hours, preferably overnight.
  2. Prep the hardwood charcoal: About 30 minutes before grilling, light your charcoal chimney. Let the coals burn until glowing and partially ash-covered. Spread the hardwood charcoal evenly across the grill grate and let the grill heat up, aim for a very hot surface.
  3. Let steaks rest at room temp: Remove the 3.5 lbs steaks (ribeye or NY strip or sirloin, 1.5 inches thick) from the fridge about 15 minutes before grilling so they come closer to room temperature. This ensures more even cooking.
  4. First side: Place the steaks directly on the hot grate. Don't move them for the first 4 minutes this builds a good crust. Close the cover.
  5. Second side: Flip the steaks and grill for another 4 minutes on the second side with the cover closed. For medium-well, aim for an internal temperature of 160°F (check with a meat thermometer at the center). The steaks should have a dark, caramelized crust.
  6. Rest and serve: Transfer to a cutting board and let rest for 5 minutes before serving. This allows the juices to redistribute.
  7. (I recommend some frozen curly fries air fried as a side)
