Ingredients

  • 1.5 lbs ground beef (80/20 blend)
  • 1.5 teaspoons tsp salt
  • 1 teaspoons tsp black pepper
  • 0.8 teaspoons tsp garlic powder
  • 0.8 teaspoons tsp onion powder
  • 1 chimney of charcoal
  • 4 burger buns
  • 2 tablespoons tbsp butter (for toasting buns, optional)

Method

  1. Prep the charcoal: Preheat a chimney full of charcoal until it's glowing and fully lit (about 20 minutes ). Spread the hot coals evenly across the grill grate and let the grill reach high heat.
  2. Form the patties: In a large bowl, combine 1.5 lbs ground beef (80/20 blend) with 1.5 teaspoons tsp salt, 1 teaspoons tsp black pepper, 0.8 teaspoons tsp garlic powder, and 0.8 teaspoons tsp onion powder. Mix gently with your hands until just combined, don't overwork the meat or the burgers will be tough. Form into 4 patties of about 1/3 lb each. Make a slight indent in the center of each patty with your thumb. Or just buy pre-formed patties.
  3. Place burgers on grill: Once the grill is sizzling hot, place the burgers directly on the grate. Close the cover.
  4. Flip frequently: After 5 minutes, open the cover and flip the burgers. Close the cover again. Continue flipping every 1-2 minutes to build an even crust and prevent burning. This frequent flipping keeps the interior juicy while developing a good char.
  5. Cook to desired doneness: Cook until the internal temperature reaches 160°F for well-done or 155°F for medium (about 6-8 minutes total, depending on thickness and heat). A meat thermometer is your best friend here.
  6. Toast buns (optional): Optional: Toast the 4 burger buns cut-side down on the grill for 1-2 minutes while the burgers finish cooking.
  7. Rest and serve: Remove burgers and let rest for 1-2 minutes. Assemble with your favorite toppings and serve immediately.
